Easy, healthy meals ready in less than half an hour

If you’ve been following my blogs for awhile, you’ll have known by now that I’m a sucker for homemade food that can be done under 20 minutes, especially when there’s no time for a fourth-year student to mess around in the kitchen with. Therefore, I usually opt for simple, nutritious meals that can be ready in less than half an hour, with few ingredients and minimum amount of washing up afterwards. Here are some of my favourite vegetarian recipes for breakfast, lunch/dinner and dessert/snack.

Breakfast:

Preparation/cook time: 20 minutes

Ingredients:

1 ripe medium banana

1 medium egg

2 tbsp oat or plain flour (optional; I usually add some flour to make the batter thicker to make it easier to flip the pancakes on frying pan)

1/2 tsp olive oil/ margarine

2 tbsp soya milk or any plant-based milk

Optional ingredients for flavour and extra nutrients:

1 tsp Matcha powder (very high in anti-oxidants)

1 tbsp chia seed (high in omega 3)

1 tbsp protein powder

Steps:

1. In a mixing bowl, mash the banana with a fork until the mixture is smooth without lumps. Add the egg, flour and soya milk and other optional ingredients into the bowl and mix well.

2. Pour the batter onto a heated pan, over medium heat.

3. Flip the pancakes when you see bubbles/pores forming on the surface of the pancakes. (Usually, this takes about a minute but it depends on your stove I guess.)

4. This is optional. I usually spice up my pancake stack with some berries, yoghurt with honey or peanut butter.

Lunch/Dinner:

Preparation/cook time: 20 minutes

Ingredients:

1/2 brown onion

2 handfuls spinach

A handful closed-up or Portobello mushrooms, sliced

1 courgette, spiralised/ cut into thin strips

1/2 tsp olive oil

1 tbsp reduced-fat crème fraîche sauce

Black pepper (optional, for seasoning)

Steps:

1. Fry the onion in a saucepan until slightly soft, over a medium-high heat.

2. Stir in the courgette, spinach and mushrooms.

3. Remove the pan from heat and add in the crème fraîche sauce, stir well.

Dessert/snack:

Preparation/cook time: 5 minutes

Ingredients:

1/2 ripe avocado

1 tbsp cacao powder

1 dash soya milk or any dairy/plant-based milk

Ingredient:

1. Blend all the ingredients in blender until smooth. Voilà, a yummy easy peasy dessert/snack is ready!
